Stainless Steel Cookware Advantages

I currently only have low-cost non-stick pans, and want to upgrade to something that will produce better results (especially for things and burning flesh browning). What are the advantages / disadvantages of stainless steel copper cookware and cast iron? What is the best all-purpose bread?
I never use, purchase or possession of polytetrafluoroethylene (PTFE) or any other non-stick pan.
