Humbly that this is the best recipe I created. I've been doing this for over 35 years and continue to strive to do better all the time. I usually serve for the holidays and the smell of lasagna in the oven has become such an important part of the Thanksgiving holiday and Christmas is turkey in other houses. A warning about my lasagne – but you must use fresh pasta, let them dry overnight and cook them before adding them to the lasagna. If using fresh and cooked, do not tend to mix with other ingredients found the hard way one time. By the way, use the setting of 4 for the size of the pasta you are using a KitchenAid pasta maker attachment unless you really like the thin paste (Then use the settings of 5).
Ingredients (Serves 12 – the proportions given below are for two large baking dish lasagna with all the tomato sauce Botticelli If you want only a plate, all in the cut. medium including the sauce).:
- Botticelli rich Italian tomato sauce as called for in the recipe (do not forget to serve the sausage for garnish)
- 2 24-ounce containers – cottage cheese, small curd
- 4 – eggs
- 4 pounds – mozzarella cheese, grated
- 16 oz – fresh grated Parmesan cheese
- 2 pounds – fresh lasagna noodles
Preparation:
Prepare Botticelli rich Italian tomato sauce. Remember that you will do in two plates of lasagna baking to make sure everything divided equally between the two plates. We like to make a dish of our family and freeze one for a later date. Both as my baking dishes 11 x 15 x 3 inches. In fact, I prepare a dish and start the kitchen while I am preparing the second course. It is therefore necessary to prepare half of the ingredients for the starter and the rest for the main course.
Mix cottage cheese and eggs together in a large bowl.

Cook lasagna noodles in salted water as described in the recipe.
Prepare lasagna noodles.

Preheat oven to 350 degrees F. Line bottom of dish with tomato sauce. Place a layer of noodles on top of the sauce and cover the noodles with sauce. Spoon tablespoons of cottage cheese along three rows on the plate (see photo). Spread about two handfuls of mozzarella and a handful of Parmesan cheese.

Place another layer of noodles and repeat until all ingredients are used. I usually like to put some more cheese on top of what we do in the layers.

Cook for one hour and then let cool for 10 minutes before cutting into portions. Perfect!
