Variation: Add ½ teaspoon grated ginger or a pinch of pepper zing added.

Sugar Free Strawberry Pie

No need to abandon the treatment of quintessential summer just because you have to cut sugar out of your diet. Here are some ways to make your strawberry cake guilt and no sugar.

– Cut fresh berries and sweetened with Splenda instead of frozen berries sweetened with sugar or sweetener.

– Instead of high calorie cake or cookies, bake a cake without sugar to serve as the base.

– Other than that, use cookies without sugar or vanilla cookies instead of cake base. Let berries sit on them for a minute or two to allow the juices to sink in.

– Top with a dollop of fresh whipped cream home, either unsweetened or sweetened with a packet of sugar substitute.

– Cool or two cups of skim or lowfat milk to just above zero. Beat with a thick, bubbly foam electric mixer with the sugar substitute sweetener.

Ingredients

3 c. nonfat milk

¼ C. nonfat dry milk

1 cup granulated Splenda

8 egg yolks

1 teaspoon vanilla extract

3 c. fruit

Ice cream maker

Start by mixing two cups of skim milk, powdered milk and Splenda in a heavy saucepan. Simmer, but do not boil. Then set aside the hot milk.

Whip egg yolks until thick and creamy. Will be a light color, creamy and be able to draw a knife through the buds and leave a tape.

Add a cup of hot milk to eggs, while whisking the mixture constantly. This "genius" so that the yolks do not cook hot milk.

Pour the egg and milk mixture back into the pot and reduce heat to medium. Cook over medium heat, stirring constantly, until mixture is about the thickness of the sauce thick.

Stir in cold milk (can use half and half or light cream instead of ice cream creamier) and vanilla, then refrigerate until cold – at least eight hours or overnight.

Add pureed or chopped fruit to cream mixture, then pour into the bowl of ice cream freezer. Hence on, follow the instructions in the freezer of ice cream.

Without ice cream add sugar

2 cups mango puree

Hull 2 cups mashed strawberries

1 cup raisins soaked in brandy and ¼ cup rum

2 cups mixed berries, pureed and strained to remove seeds

½ cup finely chopped mint leaves 1 cup mashed peach
