Liquid nitrogen ice cream?
I make ice cream with liquid nitrogen. can do with a recipe using frozen eggs as normal, Right? This recipe for boiling cream, sugar and chocolate eggs … … whiskings pour the boiled milk mixture with eggs and then cook the mixture simmer …. add more cream and vanilla … cooling for a couple of hours …. this mixture is usually cooled in an ice cream maker but u think you can use liquid nitrogen instead ?!?!?!? please let me know if this will work! thanks!
KanMed, people use nitrogen liquid to make ice cream all the time. There is an extremely soft ice cream texture because the grains formed are so small. To the Asker: Go for it. I do not see what difference makes the recipe. If the recipe that works in an ice cream maker that should work also with liquid nitrogen. I'm not sure the best way to introduce nitrogen. Probably beating slowly add the mixture quickly whist.
