substitution of flour for bread flour?
I just bought a Cuisinart convection bread machine and the recipe I'm making calls for bread flour, the problem is that they only have flour. Is good only for the use of flour?
In fact, the bread flour and cake flour are very different. Bread flour has high gluten content. Gluten is the protein that makes bread more elastic. With a higher gluten content will have a softer, increasing superior bread. Bread made with all-purpose flour is a bit more crumbly, but they should still taste good. cake flour is not going to work well at all for the bread. It is very fine grained and has a relatively low content of gluten.
