Breadmaker Sourdough Recipe

I would do this in my bread machine
To make sourdough bread, you must have a sourdough starter and healthy and active. * Recipes are hybrids that have to start with a commercial yeast let stand for a day or two, but that is not sour. That's one poolish biga, or benefits (depending on which country you come from, different terms) If you want a real sourdough, take time to develop a traditional starter. It is well worth it, and the culinary journey (learning experience) is fantastic: Here is a popular spot for a traditional sourdough going http://www.squidoo.com/sourdoughstarter. Then once you have the sourdough a viable and active couple of weeks you are ready to make bread: http://www.squidoo.com/real-sourdough. Sourdough takes longer to rise, and so you have to do the synchronization settings with the bread machine and not just put the dough in and expect to act as commercial yeast. Dough is not fast food. It's slow and worth every moment needed.
