What matters is the construction and design. For these are basically the same. Aluminum distributes heat very well, is cheap and light. Sides of this tray also aluminum, which means the excess heat can escape to the sides. Calphalon / Analon are the same. Buy the cheapest. I like All-Clad FORGIVE type of construction is aluminum better because GO UP THE SIDES OF PAN, therefore more but whole affair is between two layers of stainless steel. Do not buy expensive All-Clad brand however. similar design available in 5 layers Kitchen Aid and Cuisinart Multi-CLAD (I think) for less money. It is important that the word "dress" is used to describe the means — cookware foil inner layer is on the side. You can call three layers or five layers. There should be a picture of a cross section instead of the way in which the aluminum is on the side of the pan. Beware of pots with only one aluminum or copper disk at the bottom of the pan. Much less forgiving and more likely to burn your food when you are multitasking. It should not be able to see a hard line on the pan.
